Eggplant Curry (Bharli Vangi) Maharashtrian Style

Served with Rice and Toor daal

Hi there!

So my first post has to be for my favorite dish-- Maharashtrian style Bharli Vangi.🍛
(pronounced: Bhar-lee Vaan-gi as in Github)

  • There are many methods for making Bharli Vangi out there. I prefer it this way as it is very quick and doesn't require more than one pan! 😉😁 Also, no previous prep required.
  • Some methods require grated coconut in their recipe. However, if you want to have it for more than 2 meals and store in the refrigerator, using coconut is not ideal (as the coconut goes bad and gives a foul smell to the gravy).

So let me start off with the ingredients and the recipe:

Ingredients -

Eggplant - 2 (big)
Vegetable Oil (Any oil works)
Cumin seeds (Jeera) - 1 teaspoon
Mustard seeds - 1 teaspoon
Curry leaves - 9/10
Onion (finely chopped) - 1 big
Ginger Garlic Paste - 1 tablespoon
Salt, as per taste
Cilantro, chopped (optional, for garnishing)
Water

For gravy:

Crushed Peanut Powder - 1/2 cup
Tomato, chopped - 1
Goda masala (Available in Indian stores) - 1 tablespoon
Brown sugar - 1 teaspoon
Red Chilli powder - 1 tablespoon
Turmeric powder (Haldi) - 1 teaspoon
Cilantro, chopped - 1/4 cup

Preparation -

  1. Take a mixer/blender. Add-
    Peanut powder, tomato, Goda masala, brown sugar, red chilli powder, turmeric and cilantro.
    Mix it well. Keep this gravy mixture aside.
  2. Heat oil in a pan. Throw in the mustard and cumin seeds.
    After the mustard seeds start to crackle, add curry leaves first, then chopped onions.
  3. After the onion starts turning light brown, add ginger-garlic paste. Sprinkle some salt.
  4. After the ginger-garlic paste is fried enough, add the blended mixture for the gravy to the pan. Add eggplant cubes along with it. (Every cube can be of size approx. half of our index finger's.)
  5. Add 1/2 cup water and let it boil for 5-6 minutes on medium flame.
    (Add water as per desired consistency.)
After the eggplant cubes are soft and cooked, the dish is ready to eat. Garnish on top with chopped cilantro. Serve with rice or any bread like naan, chapati, roti, poori, etc.
