Eggplant Curry (Bharli Vangi) Maharashtrian Style

Served with Rice and Toor daal Hi there! So my first post has to be for my favorite dish-- Maharashtrian style Bharli Vangi .🍛 ( pronounced: Bhar-lee Vaan-gi as in Github ) There are many methods for making Bharli Vangi out there. I prefer it this way as it is very quick and doesn't require more than one pan! 😉😁 Also, no previous prep required. Some methods require grated coconut in their recipe. However, if you want to have it for more than 2 meals and store in the refrigerator, using coconut is not ideal (as the coconut goes bad and gives a foul smell to the gravy). So let me start off with the ingredients and the recipe: Ingredients - Eggplant - 2 (big) Vegetable Oil (Any oil works) Cumin seeds (Jeera) - 1 teaspoon Mustard seeds - 1 teaspoon Curry leaves - 9/10 Onion (finely chopped) - 1 big Ginger Garlic Paste - 1 tablespoon Salt, as per taste Cilantro, chopped (optional, for garnishing) Water For gravy : Crushed Peanut Powder - 1/2 cup Tomato, chopped - 1 Goda masala (Av...
